Heart-shaped desserts and red side dishes will not be part of Chef Gavin Rauch’s Valentine’s Day menu at The Pavillion Family Restaurant this year. Instead he has opted for a rustic romantic menu that is sure to please everyone around the table.
Polokwane Observer was privileged to watch Chef Gavin perfecting his Valentine’s Day menu on Tuesday.
For starters succulent garlic snails nestled in a delicious roasted bone marrow disc will be served with melba toast. If this does not appeal, try the mussels with Parmesan crust accompanied by a creamy bisque and freshly baked bread.
Rauch’s finesse was evident when he prepared one of the main course dishes, stuffed chicken breast with oven dried tomatoes, mozzarella and mushrooms, served with origanum mash, green beans and a creamy mushroom sauce. “I have the perfect wine to accompany each dish on my Valentine’s Day menu, and a free glass of wine will be served with each dish.”
Breaking with the tradition of serving white wine with poultry, he recommends the Douglas Green Rib Shack Red vintage blend to accompany the stuffed chicken breast.
For red meat lovers there is a 250 g peppered beef fillet served on a bed of mash and green beans, complemented by a tasty herb jus.
Rauch’s desserts are masterpieces of simplicity and the perfect way to round off such a robust meal. There is a choice of poached pear with vanilla bean custard or chocolate brownie with hazelnut chocolate dressing.
This special three-course menu will be available on Valentine’s Day from 13:00 and bookings are essential. The cost is R500 per couple, and a free glass of wine, perfectly paired, will be served with each dish.
“The relaxed, airy outdoor atmosphere of The Pavillion will add just the right touch of romance to your Valentine’s Day dinner,” Rauch assures patrons.
